My love for pasta and pizza hangs on similar fringes that are- my obsession with cheese. When I read the article that said that the humble cheese is as addictive as drugs, I could relate. Huh, we didn’t need full-blown research to figure that one out. My love for cheese spans from the mild cheese to sharp cheese. I even enjoy the pungent-smelling ones as well. Therefore, when I crave pasta, what I truly want is cheese (not pasta). Maybe, one day when I go to Italy and taste the real Italian pasta, I might even enjoy the cheese-less version. However, right now, cheese-less pasta seems implausible. Add mushroom to cheese and, it feels like heaven.

Growing up, I was never a fan of mushrooms. In India, most of the households cook mushroom just like any curried vegetable. I used to think it is bland. My perception changed when mum started baking mushroom or barbequing it. It was then that I realized the full glory of this delicious fungus.

I started experimenting with mushrooms in every dish. One of my favorite and the easiest to create is the mushroom linguine pasta. I boil the linguine pasta and add a cup of milk and ½ cup of grated processed cheese. After letting it simmer for a while, I add sautéed mushrooms. I sprinkle some Italian seasoning on it and voila!!!
